I have tried to be adventurous this year with my cooking. I really should have made it a New Year’s resolution in fact. Usually, I am stubborn and don’t like trying new things, especially new foods. I am very particular, and I just know I won’t like certain foods even before trying them. Well, I made a side dish this weekend that I never would have willingly tried before this year. In fact, I was very excited to make this dish!
Last month I made Cauliflower Buffalo Wings, which were spectacular. This recipe is very similar in flavors to that one. I wanted to make more spicy cauliflower, but I wanted to try an easier, lower calorie way to accomplish that. Also, I was a tad lazy and didn’t feel like battering and baking cauliflower this weekend. The crock pot does all the work for this recipe, and it only takes a few hours to bake in the crock pot. This cauliflower is cheesy and spicy. It was wonderful. Samuel really enjoyed it too. If you like spicy and cheesy, I recommend this recipe 100%. It tasted like my cauliflower buffalo wings, but with an added sauciness and cheesiness.
I’m not sure you can even call this a “recipe” because it is so simple to make. I used fresh cauliflower for this recipe. You can use frozen if you’d like. I cut my cauliflower head into florets, washed them, and then drained them. If you are using frozen cauliflower, you can leave them out to thaw partially. It isn’t required, but it is an option. The first real step though is to combine all the ingredients called for in one bowl. So toss your cauliflower, cheese coup, wing sauce, salt, pepper, and shredded cheese into a bowl together.
Make sure you mix everything together well. Since this bakes in the crock pot on high, you will want all of the cauliflower to have a nice coating of cheesy wing sauce. Once your ingredients are all mixed together well, place everything into the prepared crock pot. Turn your crock pot on HIGH and cook for 2 ½ to 3 hours or until softened and cooked through. I didn’t lift the lid off at all during the baking. I also did not stir the cauliflower. I just let it do it’s own thing until it was time to check it around 2 ½ hours.
These cauliflower are really delicious. I love the flavor of wing sauce, and I love cheese. So pair these two loves with cauliflower and it became perfect. I haven’t been a die hard fan of cauliflower. This recipe is helping me come around though. These cauliflower and my cauliflower wings are both helping me enjoy cauliflower. I will say this is a very filling side dish. I had a nice bowlful along with a sandwich, and I was full. Even if you aren’t a lover of cauliflower, I recommend you give this recipe a shot. It may help you love cauliflower like it helped me!
Crock Pot Cheesy Buffalo Cauliflower
Total calories: 1,032
- 2 heads of fresh cauliflower florets or 2 – 12 oz. packages of frozen cauliflower florets
- 2 – 10 ¾ oz cans cheddar cheese soup
- 1 cup shredded extra sharp or sharp cheddar cheese
- ½ cup Frank’s Red Hot Wings Buffalo Sauce (or your favorite wing sauce)
- ¼ tsp salt
- ¼ tsp pepper
- Spray the inside of your crock pot with nonstick cooking spray.
- Combine all the ingredients in a large bowl, and stir until everything is well incorporated.
- Transfer the contents of the bowl into your crock pot.
- Cook on HIGH for about 2 ½ to 3 hours, or until cauliflower is soft and cooked through
