As a vegetarian, there are some foods I wish I could have, if they were meatless. One of the foods I would enjoy if it were meat-free would be wings. I love the flavor of wing sauce. It’s slightly spicy, acidic, and tangy. I’ve put wing sauce on vegetarian meat substitutes, but I wanted something more. I wanted something that tasted like it was deep fried and smothered in wing sauce. So I experimented with putting wing sauce on my newly favored vegetable interest: cauliflower.

Fried foods and I have a love-hate relationship. I love to eat them, but I hate how high in calories they are. It is hard to resist a crunchy fried food. Since my switch to a low calorie diet, I have done a pretty decent job at omitting fried foods. There is one fried food that I occasionally dream about though: onion rings. I love all things onion. I also love the crunchy battered onion rings that come straight out of the fryer. Unfortunately, fried onion rings are entirely too high in calorie for me to enjoy a full serving. So, I decided to make onion rings I could eat a full serving of without feeling guilty about calories.

It is well established among my family and friends that I am a terribly picky eater. I already limit myself by being a vegetarian. Add to that limitation a dislike of most vegetables. I generally don’t like to try new foods. I use the “I just know I’m not going to like that,” excuse about foods I have never even tried. However, since my change to a healthy eating lifestyle, I have tried new foods and experimented more. Samuel and I tried an appetizer called “zucchini fritte” at a restaurant on vacation a month ago. We didn’t know what zucchini fritte was, but the price was right. I don’t typically like zucchini, and I was very hesitant to try it. Turns out, zucchini frittes are fried zucchini chips. They were incredible! The chips were salty, crunchy, and addictive. I’ve been thinking about them for a month. So, I decided to make my own!
