In general, I’m a fan of soft cookies over crunchy cookies. I’m pretty sure I’ve said this before. Anyway, soft, fluffy cookies are just delightful. I am not generally a fan of fruit in cookies. However, this cookie may be a delicious exception. This cookie is a great mixture of soft, cake-like texture and a nice pop of blueberry. Oh, did I mention it has a cream cheese glaze? There’s that too.
So, I don’t want you to judge me. This is another breakfast post. It also involves blueberries. I know I’ve been posting a lot of breakfast items lately. I even posted about a Blueberry Buttermilk Breakfast Cake a few days ago. This may be getting a little out of hand, but I promise I can change. I just can’t help it. The blueberry bug bit me this week. As you recall during my pumpkin-palooza in the fall, sometimes I just can’t help but make a few posts about ingredients I love. However breakfast/blueberry crazy I may be going, you shouldn’t resist this recipe. It’s pretty delicious.
I feel as though I may have a problem. My love for breakfast pastries seems to be frequently appearing on my blog. It could be worse right? At least these are healthy breakfast sweets. But seriously, I can’t help myself. I’m at it again. This time, you’re in for a treat. This may be one of the most successful recipes I have ever made. It had rave reviews, and no left overs. Prepare yourselves.
My dad once worked in the kitchen of a restaurant for many years. He would occasionally bring me crumbles or cobblers from his work when I lived back at home during my school years. I have eaten a lot of crumbles and cobblers. There came a time when I just couldn’t eat them any more. A few years have gone by since then, and I haven’t really had a crumble or cobbler since. This week, I was finally ready to dive back in to the world of bubbling fruit and crumbly toppings.
If you have read some of my other posts, you know I love breakfast pastries. It’s one of the few times you can get away with having dessert for breakfast. I have realized not everyone loves super sweet pastries first thing in the morning. Shame on them, I know. But alas, I am occasionally one of those people. So, I wanted to make a lightly sweet breakfast pastry anyone could enjoy. I have attempted with outrageous success the Pumpkin Scones with Spiced Glaze, and now comes the next scone: blueberry.
