Easy, cheap meals are very important in my life. Sometimes I can make the more involved recipes. Other times I don’t have longer than to throw something in the oven or into a skillet. So, I like to have a variety of recipes that fit different situations and occasions. Once again I channeled my love for brinner into this recipe. However, this made delicious leftovers for breakfast, and it can easily be made quickly in the mornings.
Along with Italian food, I love Mexican food. I am also a huge fan of casseroles. In fact, I’ve made a few casseroles on here already. A couple of those casseroles happen to be Mexican inspired. So, I guess you could say I enjoy making and eating Mexican casseroles. Anyway, this post includes a delicious Mexican casserole. Oh, and it includes Doritos. Doritos are always delicious.
I am a fan of one pot meals. I’ve made one other on this blog, One Pot Garlic and White Cheddar Pasta, and it was tasty. One pot meals are wonderful because you cook everything in one pot. This makes doing dishes very easy. It also makes making dinner easy. So in the spirit of one pot dishes, I wanted to do one without pasta. I decided to make a dish that is hearty and delicious.

This may seem like an odd post for Christmas, but I think all food is perfect during the holidays. One of the most comforting foods, to me, is pasta. Pasta is one of my favorite foods. I especially love it in casseroles when it is melty and cheesy. This recipe does just that!
