Since I starting blogging, I have branched out and tried many new things I never thought I would. The real turn of events is I have liked nearly all of the foods I was sure I would hate. Weird how that works. Please hold the “I told you so’s” until after this blog is finished. Anyway, one of the foods I once hated but now love is cauliflower. I have a few recipes on here featuring this versatile vegetable (Crock Pot Cheesy Buffalo Cauliflower, Creamy Cauliflower Soup, and Cauliflower Buffalo Wings). However, none of these cauliflower recipes are as easy as the one that follows. If you love mashed potatoes, you are in for an amazing treat.
I have tried to be adventurous this year with my cooking. I really should have made it a New Year’s resolution in fact. Usually, I am stubborn and don’t like trying new things, especially new foods. I am very particular, and I just know I won’t like certain foods even before trying them. Well, I made a side dish this weekend that I never would have willingly tried before this year. In fact, I was very excited to make this dish!
As a vegetarian, there are some foods I wish I could have, if they were meatless. One of the foods I would enjoy if it were meat-free would be wings. I love the flavor of wing sauce. It’s slightly spicy, acidic, and tangy. I’ve put wing sauce on vegetarian meat substitutes, but I wanted something more. I wanted something that tasted like it was deep fried and smothered in wing sauce. So I experimented with putting wing sauce on my newly favored vegetable interest: cauliflower.
There is a recently developed tradition in our house called Soup Sunday. Soups are a fabulous way to cut calories but pack in filling flavor. So for a few months I have integrated Soup Sunday into our weekly meals. I look forward to Soup Sunday every week. A warm bowl of soup with a piece of bread or a roll is just heavenly.
I know a soup recipe is crazy good when Samuel asks for it to be added to the regular Sunday rotation. This creamy cauliflower soup met my guinea pig’s standards because it was immediately requested to be put in rotation upon tasting it. Now I have a confession to make. Continue reading
