I enjoy dabbling with different recipes in my kitchen. Over the last few months of my blogging experience, I’ve had a lot of fun trying new things. One of the foods I’ve enjoyed focusing recipes around is tofu. Granted, I’ve only posted one other recipe with tofu in it, Chocolate Silken Mousse. This was one of the first recipes I ever posted on my blog. In the spirit of that recipe, I made a new recipe involving tofu and chocolate.
Lately I have been exploring different ingredients in my baking. I started to use Truvia Baking Blend in place of sugar and Splenda. I really, really love this switch to Truvia. I then started to look into different swaps with ingredients. I have been swapping apple sauce in place of oil in quite a few of my recipes. Now, I am starting to swap out butter and oil for Greek yogurt. I have to say, so far I am impressed. I made this successful swap in my Yogurt Chocolate Chip Cookies, and those were delicious. So I wanted to give you another yummy recipe featuring Greek yogurt.
You know I’m a dessert fiend. No need to go through this again in great detail. If I had to rank desserts, it would go: cakes, cookies, cupcakes, and then pies (with other desserts thrown into the lineup as well). I wanted to focus on a cookie for this blog. My favorite cookie would have to be chocolate chip. I have made Soft Chocolate Chip Cookies and Chocolate Chip Potato Chip Cookies on here before. Both of these recipes rock. So I wanted to add in another chocolate chip cookie recipe that is slightly different and still low in calories.
Now, I’m not under the delusion that everyone will love all of my recipes on here. We all have different taste buds, which I appreciate. I certainly don’t like everything that Samuel likes. Having said that, I love posting interesting recipes that are fun and unique. I have really started enjoying trying new things in the kitchen since starting my blog in November. This recipe fall under that category. Will everyone like it? No. It’s different and definitely not the norm.
Have you ever eaten a food and wondered where it had been your whole life? It was almost a food epiphany really. Well, I had that. I was making cookies (yes, I made cookies twice this week don’t judge me) again, only this time was different. As I was making them, I thought they looked and smelled pretty good. Then, I baked them. Then, I ate one. My world exploded into colors I’ve never seen before. These are really, really good. If you’ve never had a cookie like this, you’ll wonder where it has been your whole life.
If you’ve read some previous posts, you may think I’m an innovative thinker in the kitchen, way ahead of my time with culinary exploration. Or you think I’m weird. I have tried some interesting recipes, and they came out so delicious (see Chocolate Silken Mousse and Caramel Cheetos). So, I’ve made another interesting recipe this week. It may scare you because it’s a bit out there, but it’s one of the most delicious cookies I have ever had.
If you don’t already know, you are about to find out that I have a big weakness when it comes to food. Sweets. I absolutely love sweets, and I can’t think of a time when I said something was “too sweet.” That phrase doesn’t even exist in my vocabulary. Well, this creates a problem when it comes to calories. Most sweets are very high in calories, and this doesn’t work well with my low calorie lifestyle. So I came across a soft chocolate chip cookie recipe that I was able to alter to fit my needs. I’m not sure if you can beat 77 calories a cookie!
