You all know how much I love easy recipes. Combine an easy recipe with something saucy, cheesy, and filling and I’m interested. Very interested. I also love classic dishes with a slight twist to them. So, I wanted to share a very classic dish, spaghetti with red sauce, but made in a slightly different way.
You may have noticed by now that I love pasta dishes. Pasta itself can be higher in calories. I definitely don’t advocate high calorie dishes on my blog. So, I like to pair pasta with lower calorie sauces. It is so easy to make low calorie sauces that are rich in flavors. This way you have a hearty pasta and a flavorful, low calorie sauce that doesn’t make you feel guilty for eating a hearty dish.
It’s no secret I love one pot meals. I’ve made quite a few on this blog because they are just too easy. It’s really easy to take traditional favorites and re-make them into one pot dishes. This post is no exception to that. Lasagna is one of my favorite Italian dishes. I’ve even made one on this blog. However, sometimes I don’t like layering the ingredients because I get lazy. This one pot lasagna fixes that challenge.

My favorite food is pizza. If I had to eat the same type of food every day, I would easily choose pizza. This post comes with something I’ve been waiting a little while to experiment with. It’s a twist on traditional pizza. I know, I know. “If it ain’t broke, don’t fix it.” Well, pizza tends to be a little high in calories, therefore it is a little broke for me. So, I wanted to try something a little different and lower calorie. I’ve seen cauliflower crust pizzas, which I will eventually try. However, this is a pizza I haven’t seen around much in the social scene.
Well, we all know I love pasta. It’s like I have a pasta disease, really. I just can’t help it. Pasta is a weekly must for me. I find pasta filling and definitely worth the calories when it is done correctly. I tried a little different pasta dish this week. It’s based around hearty rigatoni and creamy cheese. Yes, big surprise I used cheese. It’s also a disease I have… There is no cure for pasta and cheese disease. However, this dish comes pretty darn close at healing my ailments.
I’ve posted a few times about how I love Italian food. Pizza is probably my favorite food of all foods. I’ve probably said this as well. And yet I haven’t made pizza on this blog yet. I have some future plans for pizzas I would like to try, but this post comes with a recipe I have been making for a few years. It is a form of pizza, kind of. It tastes like a delicious pizza casserole of sorts. I’ve enjoyed this recipe for several years, and it is very easy to make.
Soup Sunday is honestly one of my favorite things to look forward to during the week. I love no fuss dinners that don’t typically require a ton of work. It recently became colder and snowy here in Nebraska over the weekend, so soup was the perfect meal. Not only does soup make a wonderful dinner, it makes yummy lunches for the next few days. So, I decided I wanted to try a soup that combined two of my favorite things- cheesy pasta and tomato soup.
