It’s no secret I love one pot meals. I’ve made quite a few on this blog because they are just too easy. It’s really easy to take traditional favorites and re-make them into one pot dishes. This post is no exception to that. Lasagna is one of my favorite Italian dishes. I’ve even made one on this blog. However, sometimes I don’t like layering the ingredients because I get lazy. This one pot lasagna fixes that challenge.
Sometimes I just want a no-fuss, easy side dish for meals. I love cooking, but sometimes I get lazy. So, for “Mexican night,” I needed a simple side dish. I’m a huge fan of Mexican rice, so that seemed to be a perfect side dish. I have made a Mexican Rice Casserole before, but it requires slightly more work than I wanted to do. So, I decided to make a simplified Mexican rice side dish. This is so easy you only need one pot!
I am a fan of one pot meals. I’ve made one other on this blog, One Pot Garlic and White Cheddar Pasta, and it was tasty. One pot meals are wonderful because you cook everything in one pot. This makes doing dishes very easy. It also makes making dinner easy. So in the spirit of one pot dishes, I wanted to do one without pasta. I decided to make a dish that is hearty and delicious.
I love meals that are easy to make and don’t require a lot of prep work. Sometimes I don’t have a lot of time to make intricate dinners, and sometimes I just don’t feel like spending a long time in a hot kitchen. One meal that typically doesn’t require a ton of time to make is pasta. I usually go for spaghetti and red pasta sauce. However, I have recently developed a love for pasta and white sauce. There is a problem with this though. White sauce, or Alfredo sauce, is high in calories. I developed a yummy one pot pasta with garlic and white sauce that is lower in calories to solve all my problems!
