Copycat recipes seem to be gaining popularity among people. I have featured one on my blog a few months ago, No Bake Twix Cookies. This was one of my most successful and delicious recipes yet. Not to mention, these cookies definitely tasted like Twix bars, which was the whole point of a copycat recipe. So, I wanted to create another copycat recipe and share it with you all.
I enjoy dabbling with different recipes in my kitchen. Over the last few months of my blogging experience, I’ve had a lot of fun trying new things. One of the foods I’ve enjoyed focusing recipes around is tofu. Granted, I’ve only posted one other recipe with tofu in it, Chocolate Silken Mousse. This was one of the first recipes I ever posted on my blog. In the spirit of that recipe, I made a new recipe involving tofu and chocolate.
Following my candy-making tradition at Christmas, I decided I wanted to make some candies for Easter. I haven’t attempted making Easter candy before, but really how hard could it be? Answer: really not that difficult at all. I stuck to making easy candy treats that could be easily made for any occasion. So, I present you with candy number one- the Oreo truffle.
I love sweet breads. I’m not talking about the meat sweet breads, but actual breads that are sweet. I just felt I needed to clarify this. Anyway, I have made two sweet breads before on this blog. I made a Banana Bread and Pumpkin Bread. Both of these breads were a hit. I wanted to add another sweet bread to this collection. You can never have too many breads that are perfect for breakfast and dessert.
Lately I have been exploring different ingredients in my baking. I started to use Truvia Baking Blend in place of sugar and Splenda. I really, really love this switch to Truvia. I then started to look into different swaps with ingredients. I have been swapping apple sauce in place of oil in quite a few of my recipes. Now, I am starting to swap out butter and oil for Greek yogurt. I have to say, so far I am impressed. I made this successful swap in my Yogurt Chocolate Chip Cookies, and those were delicious. So I wanted to give you another yummy recipe featuring Greek yogurt.
You know I’m a dessert fiend. No need to go through this again in great detail. If I had to rank desserts, it would go: cakes, cookies, cupcakes, and then pies (with other desserts thrown into the lineup as well). I wanted to focus on a cookie for this blog. My favorite cookie would have to be chocolate chip. I have made Soft Chocolate Chip Cookies and Chocolate Chip Potato Chip Cookies on here before. Both of these recipes rock. So I wanted to add in another chocolate chip cookie recipe that is slightly different and still low in calories.
I haven’t posted a tasty dessert in a few days now. This may be surprising to those who know me. I know not everyone feels the same way I do about desserts, so I have been working hard on diversifying my blog. However, a while ago I was working hard on creating a delicious low calorie brownie option. I have posted one other brownie recipe before, Chickpea Brownies, but I know beans in chocolate isn’t everyone’s cup of tea. So I wanted to make a “normal” brownie recipe that was easy to do and yielded delicious results.
It has been a long time since I’ve had a Rice Krispies Treat. Some people might not be aware that those aren’t vegetarian friendly. Sadly they contain marshmallows, which contain gelatin which isn’t vegetarian. This makes me sad. It was a childhood favorite I can no longer enjoy due to its ingredients list. I have clearly been recently pining over the thought of a soft, sweet, chewy Rice Krispies Treat. It dawned on me that perhaps I could make my own Rice Krispies Treats by using marshmallow’s delicious cousin marshmallow crème.
I recently purchased some cinnamon sugar pita crisps to satisfy my sweet and crunchy cravings. Sometimes I just want a small snack for a little pick-me-up in the afternoon. While the crisps were delicious, I figured I could make my own snack that would be healthier and cheaper. So, I set out trying to create a snack that would be similar to the pita crisps. I believe I found a perfect combination of sweet and crunchy with this easy to make snack. It only takes four ingredients and just a few minutes!
I love surprises. I slightly love surprising people more than being surprised. So, for breakfast this past weekend I wanted to surprise Samuel with something he loves: strawberry shortcake. Now, I eat a lot of sweet goodies for breakfast, but I can’t say I’ve had strawberry shortcake that early in my day. I wanted to think of a way to combine Samuel’s favorite dessert with something acceptable for breakfast. Prepare yourselves because this one is keeper.
